Big Hippie Ketchup
adapted from Todd Wilbur's TopSecretRecipes.com's clone of Heinz Ketchup
Ingredients
1 - 156ml can | Tomato Paste |
100ml | White Vinegar |
100ml | Water |
100ml | Allulose |
1/4 - 1/2 tsp | Stevia Liquid (Better Stevia) |
1 tsp | Salt |
1/2 tsp | Onion Powder |
1/4 tsp | Garlic Powder |
1/8 - 1/4 tsp | Xanthan Gum |
Preparation
Combine everything in a microwave safe bowl and mix until smooth.
Microwave on high for two minutes (2:00), or until the mixture is heated to simmerring.
Transfer to a squirt bottle or jar and refrigerate.
Recipe Notes
The original recipe uses a 6oz (177ml) can of tomato paste, which I presume is a standard tomato paste can size in the USA. Here in Canada, tomato paste cans are most commonly found in 156ml cans; so I have adjusted most of the recipe's amounts accordingly. The 100ml amounts for the white vinegar, water, and Allulose can easily be measured by using the empty tomato paste can; simply fill the can to 2/3 full to obtain very near to 100ml.
The original recipe contains 1/2 cup of corn syrup and 1 Tbsp. sugar. However, to make this sauce keto and diabetic friendly, I substituted Allulose and Stevia for the corn syrup and sugar. To compensate for the reduction in liquid I have adjusted the amount of water for a better consistency.
Although the amount of tomato paste, vinegar, and water are all slightly reduced, I have maintained the original amount of salt and slightly increased the amount of onion and garlic powders. I found that these new ratios provided a better flavor profile.
The original recipe did not contain Xanthan Gum; however, I found that its addition enhanced the viscosity of the finished ketchup. The original test batch in which I added Xanthan Gum, I used 1/8tsp.; but I believe that as much as 1/4tsp. could be added to achieve an even better viscosity. Experimentation with future batches will be enlightening.
